Meat-meat, meat! Meat meat! It made me long for a big plate of kale which honestly is what I made last night. The Vegetable Casseroles were also disappointingly light on vegetables, and the author seems to believe adding black beans to any dish automatically makes it "Mexican". Fun fact: countries other than Mexico rely heavily on black beans as a staple of their recipes.
We wound up making the Noodles and Cheese Casserole, which was effective, although we shoved leftover stuffing in it, because it needed using up and we're barbarians. I'll definitely try the Baked Macaroni and Cheese recipe, as well, although strangely, the index does not have a listing for "macaroni", so you have to remember it's a baked casserole in order to find it in the book. Nice weight and shape for a cookbook, weird font for the titles.
Zero photos, which might be an issue for some folks, but cute illustrations and overall a pleasing layout.

I have yet to make a recipe from this book that I didn't really enjoy -- if not absolutely love. The beer-based beef stew is especially awesome when the cooler weather comes in. This is a really useful book. It elevates the casserole, using homemade sauces and fresh ingredients. For me, the strongest chapter was seafood, which was a big surprise since tuna noodle casserole always was kind of gross. The chicken recipes are also strong.

This is serious, all right. Thumb through this book for two minutes and you'll be hooked. It's a pleasing size, a chunky pages with a nice, semi-matte stock for the cover.
